Irish Brown Bread

Ingredients

  • 5 cups of whole wheat flour
  • 2 1/2 cups of all purpose flour
  • 1/3 cup of sugar
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 cup of butter
  • 2 eggs
  • 2 1/4 cups of buttermilk

Directions

  1. In a large bowl combine the dry ingredients.
  2. By hand work in butter until the mixture resembles fine bread crumbs.
  3. In a separate bowl, best eggs until frothy.
  4. Stir in buttermilk.
  5. Make a large well in the center of the dry ingredients and gradually add the egg mixture, mixing by hand until a stiff dough is formed.
  6. Turn out on floured board and knead thoroughly.
  7. Divide dough in half and shape into two round balls.
  8. Flatten tops slightly and with a sharp knife cut an X about an inch deep.
  9. Put loaves on oiled baking sheet and bake in a 375 degree oven for 45 to 50 minutes.
  10. Should be brown and baked through.
  11. Cool before cutting into slices.
